How to marinate chicken to make it juicy?

  • 4 half chicken breasts, skinless and boneless

  • 2 tablespoons lime juice
  • 1 cup orange juice
  • 1/4 cups garlic, finely chopped
  • 2 sprigs thyme
  • orange, for garnish

  • Put the chicken breasts on a cutting board and season with salt and pepper.
  • Place the chicken breasts in a resealable bag. If you don't have one, you can place the chicken in a baking dish ensuring that the liquid covers the breasts; otherwise, double the marinade ingredients.
  • For the marinade: Coat the breasts with olive oil, lemon juice, orange juice, finely chopped garlic, and thyme. Seal the bag very well and mix with your hands so that all the chicken is marinated. If using a baking dish, mix with your hands covering all the chicken and cover with non-stick plastic. Refrigerate for 2 to 3 hours.
  • Remove the chicken from the marinade, leaving everything that has soaked in. Heat a little olive oil in a pan over medium heat, seal the chicken on both sides, and cover. Add the remaining marinade, cover, and cook for 10 minutes or until the chicken is fully cooked.
  • Serve the chicken on a platter and garnish with orange slices.
