Huevos Motuleños with Ham

Enjoy this traditional Mexican breakfast, made with a mashed habanero sauce over tortillas with refried beans and topped with a spectacular fried egg.

  • 1 onion, for the sauce, cut into small cubes
  • 2 Habanero chiles, for the sauce, finely chopped
  • 5 tomatoes, for the sauce, peeled and seeded
  • 1 cup tomato purée, natural, for the sauce
  • 6 tortillas
  • 6 eggs
  • 1 cup refried beans
  • 2 plantains
  • 1 cup peas
  • 1 red onion, sliced
  • 1 cup Cotija cheese
  • 1 cup ham
  • 1 avocado
  • cilantro, for garnish

  • For the sauce: In a pot, sauté the onion, habanero, and tomato until the ingredients are slightly browned. Once they reach this point, add the natural tomato puree, season with salt and pepper to taste, and cook for 20 minutes on low heat until you obtain a sauce with small pieces of the same ingredients.
  • In a skillet with little oil, fry the tortillas until they are slightly toasted and set aside.
  • In the same skillet where we made the tortillas, cook the fried eggs and set aside.
  • To assemble the huevos motuleños, spread a tablespoon of refried beans on the tortilla. On top of the beans, add the eggs and drizzle with the tomato-habanero sauce.
  • Once we have our egg with sauce assembled, we will accompany it with fried plantains, cooked peas, sliced red onion, cotija cheese or fresh white cheese, pork ham, and avocado cubes.
  • Garnish with fresh cilantro leaves.
