  • 6 sausages, beef, smoked, for grilling
  • 12 slices bacon
  • 3 tablespoons vegetable oil
  • 1 cup onion, in strips
  • 1 cup green bell pepper, in strips
  • 1 cup red bell pepper, in strips
  • 3 Jalapeño chiles

  • 6 hot dog buns, hot
  • mayonnaise, for dressing
  • mustard, for dressing
  • ketchup, for dressing
  • pico de gallo, with avocado, for serving

  • Wrap the sausages with the strips of bacon, set aside.
  • In a skillet with hot vegetable oil, sauté the onion together with the green bell pepper, the red bell pepper, the jalapeño, salt, and pepper; cook over medium-low heat for 10 minutes or until the vegetables are browned. Set aside.
  • In a skillet or grill with a little vegetable oil, grill the sausages wrapped in bacon until the bacon is crispy.
  • Assemble your hot dog: cut the hot dog bun on one side without fully slicing it, place the grilled sausage inside, add the sautéed peppers, the grilled jalapeño, mayonnaise, mustard, and ketchup to taste. Serve with pico de gallo and avocado.
