No-Sugar Lemon Charlotte

This no-sugar lemon charlotte recipe is perfect for satisfying your sweet cravings without much guilt, as it is made with lemon yogurt.   • 2 cups unsweetened plain yogurt
  • 2 tablespoons monk fruit
  • 1 teaspoon vanilla essence
  • 1/4 cups lime juice
  • 1 tablespoon lemon zest
  • 14 grams unflavored gelatin powder, hydrated and melted
  • 1 1/2 cups vanilla cookies
  • lemon, sliced, for decoration

  • blueberries, for decoration

  • In a bowl, mix unsweetened natural yogurt, monk fruit, vanilla essence, lemon juice, lemon zest, and gelatin until you achieve a homogeneous mixture.
  • Line the base of a 16-centimeter diameter ring with cling film, placing acetate sheets around the diameter with the same thickness as the ring. Then, place a layer of cookies, followed by a layer of the yogurt mixture. Repeat the process until the mold is filled. Chill for 40 minutes.
  • Decorate with yellow lemon slices, green lemon slices, and blueberries. Enjoy.
