  • 1/3 red cabbages
  • 1 1/2 cups water
  • 2 cups corn masa flour
  • salt
  • button mushrooms, battered, for the taco
  • pico de gallo, for accompaniment

  • Blend the purple cabbage with the water. Strain and set aside.
  • In a bowl, mix the corn flour with the water you previously strained, add the salt and mix until you have a homogeneous dough.
  • Place a bag in a tortilla press. Form small balls of dough and press to form the tortillas.
  • Cook on a griddle over low-medium heat for 3 minutes on both sides and serve with battered mushrooms and pico de gallo.
