Ribs with Bacon in Honey Mustard Sauce

  • 2 kilos pork ribs, cut
  • 1 package bacon, 250 grams
  • 1/2 kilos new potatoes
  • 1/4 cups onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 1/4 cups mustard
  • 2 cups honey
  • 1 cup lager beer
  • 1 cup whipping cream
  • 1/4 cups lime juice
  • 2 tablespoons parsley, chopped

  • On a cutting board, place the bacon and wrap it around the ribs until the meat is fully covered, set aside.
  • Heat a deep skillet over high heat, sear the ribs in the skillet until the bacon is browned, add the potatoes and cook them in the same fat until golden.
  • Add the onion, garlic, and cook until they are shiny. Incorporate the mustard, honey, light beer, heavy cream, lemon juice, and cook for about 35 minutes, until the ribs and potatoes are cooked and you have a thick sauce. Remove.
  • Serve the ribs with the potatoes on a bed of sauce. Garnish with a little chopped parsley and enjoy.
