Squash Blossom Gorditas

  • 2 tablespoons vegetable oil, for the squash blossom filling
  • 1/2 cups onion, finely chopped, for the squash blossom filling
  • 2 cups zucchini blossoms, without stem or pistil, for the squash blossom filling
  • 2 dried árbol chiles, sliced, for the squash blossom filling
  • 1/4 cups epazote, finely chopped, for the squash blossom filling
  • salt, for the squash blossom filling

  • Oaxaca cheese, shredded, for the squash blossom filling
  • 500 grams masa dough
  • 1 tablespoon lard
  • 1 pinch salt

  • For the squash blossom filling, in a skillet with hot vegetable oil, cook the onion until it begins to become shiny.
  • Add the squash blossoms, the dried árbol chili, and the epazote. Season with salt and pepper, mix, and cook for 5 minutes over medium-low heat. Remove from heat and set aside until use. Remember that the Oaxaca cheese will be added when filling the gordita.
  • In a bowl, mix the corn dough with the lard, salt, and water, remembering to pour the water gradually until the consistency is manageable and slightly moist.
  • To form the gorditas, with your hands make a ball of approximately 40 grams, flatten gradually until you obtain a circle half a centimeter thick; place on a hot griddle and cook for 6 minutes on low heat on both sides. Remove from heat.
  • With a serrated knife, open the gorditas along the edge horizontally without cutting all the way through. Fill with the stew and Oaxaca cheese.
  • Return to the griddle and heat for 3 more minutes. Serve and accompany with green salsa.
