400 grams puff pastry

Using a rolling pin, roll out the puff pastry into a rectangle.
Cut the rectangle in half and then cut smaller squares from each half.
In each square, pour jam from corner to corner, being careful not to put too much or too close to the edges to prevent overflow.
Preheat the oven to 220 degrees Celsius and form a roll with each rectangle.
Place the rolls on baking sheets lined with parchment paper underneath them.
In a bowl, beat the egg yolk and, using a brush, paint the top of the rolls.
Bake the puff pastries for 15 minutes or until golden. Remove from the oven.
