  • 2 cups corn flour for tamales
  • 3/4 cups lard
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup chicken broth
  • 2 cups chicken breast , cooked and shredded
  • 1 cup Manchego cheese, shredded
  • 8 tomatillos, boiled, for the sauce
  • 2 serrano chiles, boiled, for the sauce
  • 1/4 onions, boiled, for the sauce
  • 1 garlic clove , boiled, for the sauce
  • 1/4 cups cilantro, for the sauce
  • 1 cup sour cream , for the sauce
  • corn husk for tamale , hydrated
  • salt and pepper
  • Manchego cheese

  • Blend the tomato, serrano chili, onion, garlic, cilantro, sour cream, salt, and pepper.
  • Mix the chicken, Manchego cheese, and sauce.
  • Beat the lard until it is fluffy, then add the dough, salt, baking powder, and chicken broth until you obtain a smooth and fluffy texture. Set aside.
  • To assemble the tamales: place a portion of dough in the center of the corn husk, add 1 tablespoon of the filling, and close well.
  • Arrange the tamales in a steamer with enough water and cook the tamales for 1 hour.
  • Bathe the Swiss tamales with more green sauce and gratin with cheese.
