Three Milk Cake with Pancake Flour

  • 1 cup sugar
  • 1 1/3 cups pancake mix
  • 1 1/3 cups cow's milk
  • 2 cups unsweetened whipping cream
  • 1/4 cups cajeta
  • 1 unit condensed milk
  • 1 can table cream
  • 1 can evaporated milk
  • 1 teaspoon vanilla essence
  • 1/2 cups canned pineapple, chopped
  • 1/4 cups maraschino cherries
  • 3 tablespoons peppermint
  • 1 cup flour

  • Beat the eggs with the sugar until fluffy.
  • Add the oil in a stream while continuing to beat.
  • Add a portion of the pancake flour and whole wheat flour along with half of the milk. Repeat this process until everything is added.
  • Pour the mixture into a previously greased and floured mold.
  • Bake at 170° C for 35 minutes.
  • Take the cake out of the oven and let it cool for 30 minutes.
  • For the filling, whip 250 ml of heavy cream in a cold bowl until stiff peaks form; add the cajeta and whip until combined.
  • For the three milks, mix condensed milk, half-and-half, and evaporated milk until combined; refrigerate.
  • For the frosting, whip the remaining heavy cream with vanilla until stiff peaks form.
  • Unmold the cake and cut it in half, poking both halves with a fork.
  • Layer the cake, soaking it with half of the 3 milks.
  • Add a light layer of whipped cream with cajeta and place the second layer on top, then soak that layer with the rest of the milk mixture.
  • Cover the cake with frosting and decorate with chopped canned pineapple, strawberries, some cherries, nuts, and mint.
