  • lard
  • 1 tablet chocolate
  • lard
  • 4 ancho chiles, deveined
  • 4 mulato chiles, deveined
  • 4 pasilla chiles, deveined
  • 1 corn tortillas
  • 1 pan dulce
  • 50 grams almonds
  • 50 grams peanuts
  • 50 grams sesame seeds
  • 1 plantain
  • 2 tomatoes
  • 1 red onion
  • 3 cloves garlic
  • 1 tablet chocolate
  • 1 cinnamon stick
  • 5 allspice berries
  • 1/2 teaspoons cumin
  • 3 cups turkey broth
  • coarse salt
  • lard
  • 2 turkey legs, cooked
  • sesame seeds, for decoration
  • Mexican red rice

  • Roast the ancho chile, mulato chile, and pasilla chile on a griddle. Remove and set aside.
  • Add a bit of pork lard to the same griddle and fry the tortilla and sweet bread. Remove and set aside.
  • Add a bit of lard and sauté the almonds, peanuts, and sesame seeds. Remove and set aside.
  • Add a bit more lard and fry the plantain, tomatoes, onion, and garlic. Remove and set aside.
  • Roast all the spices on the griddle. Remove and set aside.
  • Place the chiles on a metate and use the pestle to grind all the ingredients until you obtain a paste. Repeat the same process with the rest of the ingredients until you achieve a paste.
  • Heat some lard in a saucepan and add the mole paste, then pour in the turkey broth and chocolate. Cook the turkey mole over low heat for 1 hour or until the fat from the mole rises. Then, add the turkey pieces and cook for 10 more minutes.
  • Serve the mole on a flat plate, garnish with sesame seeds, and accompany with red rice.
