2 tablespoons Smucker's® Strawberry Jam, for the pancake batter
1 cup pancake mix, for the batter
1/2 teaspoons baking powder, for the pancake batter
1 egg, for the pancake batter
2 tablespoons butter, melted, for the pancake batter
3/4 cups milk, for the pancake batter
pancake mix, for the bacon strips
vegetable oil, for frying
strawberries, for serving
raspberries, for serving

Insert a wooden stick into the slices of bacon, making sure to go through the entire slice. Place the strips of bacon on a baking sheet and, using a brush, cover with Smucker's® Strawberry Jam. Bake the bacon at 190 °C for 15 to 20 minutes or until golden and caramelized. Let cool and set aside.
For the pancake batter: Mix Smucker's® Strawberry Jam with pancake flour in a bowl, along with baking powder, the egg, melted butter, and milk. Beat until lumps are gone.
Cover the strips of bacon with pancake flour to remove excess fat. Then, completely coat the strips of bacon with the pancake flour mixture.
Heat the oil in a deep skillet and fry the bacon skewers for 8 minutes, then place them on paper towels to remove excess oil.
Serve the bacon skewers with pancake flour and accompany with Smucker's® Strawberry Jam.
