Bacon-Wrapped Güero Peppers

A simple recipe, but with great flavor, perfect for gatherings or to accompany some beers; it is easy to make and the ingredients you need can be easily obtained.

  • 1/4 kilos bacon, in strips
  • 1/4 kilos asadero cheese
  • 6 güero chiles

  • Place the peppers on the grill for a moment, not too long so they don't get soggy.
  • Cut into a triangle from the tail of the pepper to the tip, leaving the tip of the triangle towards the tip of the pepper.
  • Remove the seeds and fully devein.
  • Fry about 6 strips of bacon, let cool, and chop the strips.
  • Shred the cheese or grind it depending on the cheese chosen.
  • Fill the pepper with cheese halfway, add some chopped bacon, and fill the rest of the space in the pepper with more cheese.
  • Place the cut triangle back in its place with the pepper filled and begin to wrap the pepper with bacon, securing it with a toothpick.
  • Fry until the bacon is well browned and the cheese is completely melted. Serve hot.
