Bacon-Wrapped Güero Peppers

1/4 kilos bacon, in strips
1/4 kilos asadero cheese
6 güero chiles

Place the peppers on the grill for a moment, not too long so they don't get soggy.
Cut into a triangle from the tail of the pepper to the tip, leaving the tip of the triangle towards the tip of the pepper.
Remove the seeds and fully devein.
Fry about 6 strips of bacon, let cool, and chop the strips.
Shred the cheese or grind it depending on the cheese chosen.
Fill the pepper with cheese halfway, add some chopped bacon, and fill the rest of the space in the pepper with more cheese.
Place the cut triangle back in its place with the pepper filled and begin to wrap the pepper with bacon, securing it with a toothpick.
Fry until the bacon is well browned and the cheese is completely melted. Serve hot.
