  • salt , and ground pepper (to taste)
  • 1 cup breadcrumbs
  • vegetable oil , (as needed)
  • 3 tablespoons fresh cilantro, chopped
  • 1 tablespoon peppermint, mashed
  • 1 tablespoon extra virgin olive oil
  • 1 egg

  • Boil the banana in a pot of water until soft.
  • In a bowl, mash the banana with a fork and mix with cilantro, egg, mint, salt, and pepper.
  • Form patties and coat with panko, then fry in a pan with hot oil.
  • Remove excess grease with a paper towel and serve.
