1 cup breadcrumbs
vegetable oil , (as needed)
3 tablespoons fresh cilantro, chopped
1 tablespoon peppermint, mashed
1 tablespoon extra virgin olive oil

Boil the banana in a pot of water until soft.
In a bowl, mash the banana with a fork and mix with cilantro, egg, mint, salt, and pepper.
Form patties and coat with panko, then fry in a pan with hot oil.
Remove excess grease with a paper towel and serve.
