  • 1 cup flour
  • 1 1/2 cups water, fried
  • 1 1/2 tablespoons baking powder
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon salt
  • 3 Jalapeño chiles
  • 1 cup Manchego cheese, in cubes
  • vegetable oil
  • dressing, chipotle

  • Mix the flour, baking powder, cold water, egg, yolk, and salt until lumps are gone.
  • Remove the seeds and veins from the peppers. Fill with cheese, cut into 2 cm slices, and dip in the tempura mixture.
  • Fry the jalapeños in a pot with enough oil over medium heat for 5 minutes or until golden. Remove and place on paper towels.
  • Serve the jalapeño snacks and accompany with chipotle dressing.
