Caprese salad skewers

A super nice appetizer of caprese salad with tomato and mozzarella cheese with basil.

  • 1 bell pepper, seedless chopped
  • 1 clove garlic
  • 1 tablespoon lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 2 Mozzarella cheese, in balls
  • 1/4 cups basil
  • 20 cherry tomatoes
  • 20 leaves basil

  • Mix the peppers, garlic, lemon, oil, salt, and pepper in a bowl
  • Add the mozzarella and let it marinate at room temperature for 30 minutes
  • Sprinkle the chopped basil over the mozzarella balls
  • Cut a cherry tomato in half and place on a skewer first 1 tomato (with the center side facing out), then a mozzarella ball, and finally another tomato with a basil leaf around it
  • Serve at room temperature. You can add a balsamic dressing for people to dip them in.
