  • 3 chayotes, with thorns
  • water
  • salt
  • 1 tablespoon butter
  • 1 árbol chile
  • lime juice
  • mayonnaise
  • grated cheese
  • chile powder

  • Cook the chayotes with water and salt for 15 minutes or until well cooked. Drain, peel, and cut into small cubes.
  • Melt the butter in a pan and sauté the chayotes with the árbol chili for 3 minutes or until they take on a slightly golden color.
  • Serve the chayote esquites in cups and add lime juice, mayonnaise, grated cheese, and chili powder.
