50 milliliters San Juan® egg whites
65 grams butter
salt
200 milliliters water
300 milliliters evaporated milk
100 grams corn flakes
3 tablespoons flour
100 grams grated cheese, type Edam
125 grams cheese, Edam, cubed

Boil the water along with the butter and salt. Remove from heat.
Add the evaporated milk with the mashed potatoes and mix well. Let it rest for a few minutes.
Add light San Juan egg and sifted flour. Mix well and form a homogeneous mixture. Add the cheese and mix well.
Let the preparation cool in the refrigerator to achieve consistency.
Form flattened balls and place the cheese cubes inside. Wrap tightly by sealing the ball or shape them like croquettes.
Dust the portions with flour and fry in plenty of hot oil, lightly browning them.
Drain on absorbent paper and serve hot.
