  • 1/2 cups water, for the batter
  • 3 tablespoons sugar , for the batter
  • 1 teaspoon salt , for the batter
  • 1 cup flour , for the batter
  • 1 teaspoon yeast, for the batter
  • skewer stick
  • 1 1/2 cups Manchego cheese, in medium cubes
  • 1 1/2 cups chorizo, in thick slices
  • potato , in small cubes, boiled
  • pork rinds, crushed, for breading
  • oil , for frying
  • dressing, jalapeño

  • Mix the water, sugar, salt, flour, and yeast until you get a uniform mixture. Cover the batter with plastic wrap and let it ferment at room temperature for 15 minutes.
  • Place a cube of manchego cheese and a slice of chorizo on a skewer. Repeat the process with 2 pieces of cheese and two of chorizo.
  • Cover the skewers with the batter, pass through the boiled potato cubes, and then through the ground pork rinds. Fry in plenty of oil.
  • Serve the skewers and drizzle with jalapeño dressing.
