Brie Cheese Ring

  • 1 tablespoon Oli de Nutrioli® olive oil
  • 2 cups bacon, in medium cubes
  • 1 cup dried cranberries
  • 1/4 cups cherry jam
  • 1/4 cups red wine
  • salt
  • pepper
  • rosemary, finely chopped
  • flour, for dusting
  • 1 kilo puff pastry
  • 2 eggs, for brushing
  • 2 cups Brie cheese, in slices
  • 1/2 cups walnuts, chopped
  • 1/2 cups pistachio
  • 1/2 cups almonds, sliced
  • rosemary, for decorating

  • Heat the Oli® Olive Oil in a skillet over medium heat. Add the bacon and cook for 3 minutes. Then, add the blueberries, cherry jam, red wine, salt, pepper, and rosemary. Cook until it reduces, cool, and set aside.
  • Roll out the puff pastry on a flat surface and cut out triangles of the same size.
  • Place the triangles of dough on a greased baking tray, forming a circle. Brush with egg.
  • Fill the dough with the bacon mixture, brie cheese, walnut, pistachio, and almond. Close the ring and seal with egg.
  • Brush the ring with egg and bake at 200 °C for 25 minutes or until golden brown and the cheese has melted.
  • Decorate with rosemary and blueberries. Cut a slice and enjoy with a glass of wine.
