Brie Cheese with Raspberries, Honey, and Pistachios

  • 1/2 cups pistachios, shelled
  • 350 grams Brie cheese
  • 1/4 cups honey
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoons fresh rosemary, chopped
  • 1 cup raspberries
  • 1 package cookies

  • Preheat the oven to 180ºC.
  • Put the pistachios in a skillet and cook them until lightly toasted (10 minutes). Then place the pistachios on a plate.
  • Place the brie cheese on a baking tray and put it in the oven for about 15 minutes until the top is soft.
  • Transfer the brie cheese to a plate.
  • In a skillet, put the honey, vinegar, and rosemary, cook over medium heat until hot.
  • Add the raspberries and pistachios. Gently stir without pressing.
  • Put the mixture on top of the warm cheese and serve immediately.
