  • 2 tablespoons butter
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon Dijon mustard
  • 2 cups Manchego cheese, grated
  • 2 cups Gouda cheese, grated
  • 1 cup Brie cheese, in cubes
  • 1 tablespoon cornstarch
  • 1 pinch nutmeg
  • 1 cup beer
  • pepper
  • croutons, to accompany
  • parsley, chopped, for garnish

  • Heat the butter in a pot over medium heat. Add the garlic and cook for 2 minutes, then incorporate the Dijon mustard, Manchego cheese, Gouda cheese, Brie cheese, cornstarch, and nutmeg. Mix and let melt for 5 minutes.
  • When the cheeses have melted, pour in the beer and heat for 5 more minutes. Season the fondue with pepper and keep warm.
  • Serve the cheese fondue, add parsley, and accompany with croutons.
