Choriqueso is a version of melted cheese that contains more ingredients to add more flavors. You can serve choriqueso as a snack or make tacos. This recipe is delicious if you prepare it in a clay pot on a charcoal grill.

200 grams chorizo, cut into small pieces
2 cups Chihuahua cheese, shredded
12 flour tortillas
1/4 red onions, julienned
1 tablespoon fresh cilantro, chopped, to taste
2 pickled Jalapeño chiles, sliced
180 grams canned mushroom

Lightly brown the chorizo in a pan, add the onion and mushrooms, and let it cook on low heat for 3 minutes.
Add the jalapeños and cheese, let it cook until the cheese is melted. Sprinkle with cilantro and serve with flour tortillas.
