French Fries with Beans, Chipotle, and Cheese

These French fries are irresistibly delicious. They are super crispy on the outside and tender on the inside, but the best part is that they are accompanied by chipotle beans and melted cheese. Get ready to make them!

  • 4 potatoes
  • 2 cups vegetable oil
  • 1 tablespoon salt
  • 1 tablespoon vegetable oil
  • 1 cup refried black beans
  • 2 tablespoons chipotle chile, ground
  • 1 pinch salt
  • 1/2 cups American cheese, for nachos
  • 1 bunch green onion, the cut stems sliced for garnish

  • Preheat the oven to 200° C.
  • Cut the potatoes into sticks and rinse with water to remove excess starch. Dry very well with paper towels.
  • Heat oil in a small pot over high heat and fry the potatoes until golden brown. Drain on paper towels and season with salt.
  • In a skillet over medium heat, heat the oil and sauté the beans. Add the chipotle and salt.
  • Place the fries on a baking tray and add the beans and cheese. Bake for 5 minutes.
  • Serve and garnish with chopped green onion tops.
