The tomato hearts will be formed by cutting them in half crosswise.
With wooden skewers, pierce an olive, a cube of cheese, and two halves of tomato in opposite directions (joined by the half that was cut) to form the hearts.
Repeat the process so that each skewer has: olive, cube of cheese and tomato, olive, cube of cheese and tomato, that is, two of each.
Sprinkle with salt and pepper to taste.
