Jalapeños with Ricotta and Bacon

If you want an easy and delicious snack, these jalapeño peppers stuffed with ricotta cheese wrapped in bacon will be a hit. You can prepare them in advance and bake them a few minutes before your guests arrive.

  • 4 cups water
  • 2 tablespoons salt
  • 10 Jalapeño chiles, halved lengthwise
  • 1 cup ricotta cheese
  • 1 teaspoon black pepper, ground
  • 10 slices bacon, cut in half lengthwise

  • Preheat the oven to 190° C.
  • Heat water in a small pot on high heat, add salt and the peppers, and cook for 5 minutes.
  • Remove the peppers from the water, cool, and remove the seeds.
  • Fill the peppers with ricotta cheese and wrap with half a slice of bacon.
  • Place the peppers on a baking sheet and bake for 15 minutes or until the bacon is golden.
