  • 3 tomatoes, roasted
  • 1/4 onions, roasted
  • 1 clove garlic
  • 2 morita chiles, roasted
  • 1/4 cups chicken broth
  • salt
  • 2 tablespoons vegetable oil
  • 1 cup onion, in thin strips
  • 1 cup chorizo, shredded
  • 2 cups chicken breast, cooked and shredded
  • 2 tablespoons butter, in medium cubes
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/4 cups Mezcal
  • 1 cup asadero cheese, grated
  • 1/4 cups Cotija cheese, grated
  • 1 cup Oaxaca cheese, shredded
  • cilantro sprouts
  • serrano chile, in slices, for garnish

  • Blend the tomato, onion, garlic, morita chili, chicken broth, and salt. Set aside.
  • Heat the oil in a skillet over medium heat and add the onion and chorizo. Cook for 5 minutes or until the ingredients are golden. Add the chicken and the sauce. Cook for 10 minutes and set aside.
  • Melt the butter in a cast-iron skillet over medium heat, add the onion and garlic, and cook for 2 minutes. Add the mixture and cook for 5 more minutes. Finally, incorporate the cheeses, cover, and cook over medium heat for 5 minutes.
  • Serve the melted cheese in the same skillet, add the tinga, and garnish with cilantro sprouts and serrano pepper. Accompany with flour tortillas.
