1 kilo Mozzarella cheese, or Manchego cut into strips
4 eggs
2 cups vegetable oil
2 cups breadcrumbs
1 cup Parmesan cheese, grated
salt
marinara sauce, for dipping

In a deep bowl, mix the breadcrumbs, Parmesan cheese, and salt.
In another deep bowl, beat the eggs.
Dip each strip of Manchego cheese first in the egg and then in the breadcrumbs, and place on a baking sheet.
Freeze the cheeses for at least 2 hours or up to 1 day.
Heat the oil in a frying pan over medium heat.
Fry the cheese sticks until golden brown, about 1 minute on each side.
Place the sticks on a serving plate and accompany with cold or hot Marinara sauce.
