Portobello Mushrooms with Goat Cheese

This recipe is a delicious dish to enjoy with the whole family. Healthy and somewhat sophisticated to always maintain class, even with family.

  • 1 clove garlic, chopped
  • 1/3 tablespoons thyme
  • 1/3 red onions, chopped
  • 1 teaspoon coarse salt
  • 1 teaspoon paprika
  • 3 tablespoons olive oil
  • 4 portobello mushrooms, large
  • 2 cups goat cheese, crumbled
  • aromatic herbs
  • 1 teaspoon salt
  • 1 teaspoon small pepper
  • 4 leaves butterhead lettuce, or Italian
  • 4 slices tomato, thick, poached
  • 4 sprigs thyme, or marjoram

  • Crush the marinade ingredients in a mortar, gradually adding the oil. Set aside in a bowl.
  • Make a horizontal cut in each mushroom.
  • Add salt, pepper, and herbs.
  • Brush the outer part of the mushrooms with the marinade and cook them in the skillet or on the grill.
  • Mix the goat cheese with the rest of the marinade and stuff the mushrooms.
