1 clove garlic, chopped
1/3 tablespoons thyme
1/3 red onions, chopped
1 teaspoon coarse salt
1 teaspoon paprika
3 tablespoons olive oil
4 portobello mushrooms, large
2 cups goat cheese, crumbled
aromatic herbs
1 teaspoon salt
1 teaspoon small pepper
4 leaves butterhead lettuce, or Italian
4 slices tomato, thick, poached
4 sprigs thyme, or marjoram

Crush the marinade ingredients in a mortar, gradually adding the oil. Set aside in a bowl.
Make a horizontal cut in each mushroom.
Add salt, pepper, and herbs.
Brush the outer part of the mushrooms with the marinade and cook them in the skillet or on the grill.
Mix the goat cheese with the rest of the marinade and stuff the mushrooms.
