Potato, Granola, and Pepper Snacks

  • 2 potatoes, cooked
  • 1 bell pepper , cut into cubes
  • 1 serrano chile, finely chopped
  • 1/2 cups Manchego cheese, grated
  • 1 tablespoon unsalted butter
  • 2 eggs
  • 1 tablespoon flour
  • 1/2 cups Kellogg's® ancient grains granola: quinoa, amaranth, and apple
  • 1 teaspoon salt
  • 1/2 teaspoons pepper

  • Preheat the oven to 180° C.
  • In a bowl, mash the potatoes and combine with the rest of the ingredients.
  • Place in a greased and floured cupcake tray and bake for 20 minutes or until they take on color.
