Preheat the oven to 180 degrees Celsius.
Using a sharp knife, make a cross on the top of each fig, then gently squeeze the figs to open the fruit.
Distribute the blue cheese into the figs, topping each piece.
Carefully wrap the figs with two slices of Parma ham, making sure they are wrapped about halfway, leaving the top uncovered.
Place the prepared figs on a baking tray and cook for 8 to 10 minutes or until the cheese has melted and the Parma ham is crispy.
To serve, divide the arugula leaves among 4 plates. Place the baked figs on top of the arugula leaves.
Drizzle with balsamic vinegar, olive oil, and season to taste with salt and freshly ground black pepper.
