In a deep pot over high heat, heat 2 tablespoons of dressing, and season with pepper. Add the shrimp and cook until they turn pink. Coat them well with the dressing.
Add the shredded cheese and stir to prevent the mixture from sticking. If necessary, pour in a splash of milk. Cook over low heat.
If you don't have tortilla chips, cut the tortillas into triangles and fry or bake them until crispy.
Arrange the cheese mixture in a bowl and serve with tortilla chips.
