Stuffed Portobellos

Delicious and nutritious stuffed portobellos with turkey bacon and cheese. A delight to enjoy as a main dish or as an appetizer. They are a very striking and large variety of mushrooms, which gives them the perfect presentation to share with everyone.

  • 10 portobello mushrooms, medium
  • 250 grams turkey bacon
  • 6 scallions
  • 10 slices Manchego cheese
  • salt and pepper
  • 2 tablespoons unsalted butter

  • In a small skillet, melt the butter and sauté the chopped onion with the tail on.
  • Add the chopped turkey bacon, seasoning to taste.
  • Preheat the oven, place the cleaned portobellos without stems on a baking tray.
  • Fill the portobellos with the seasoned mixture, cover with slices of manchego cheese, and bake until they are soft and crispy.
