Mix in a deep bowl 2 eggs, feta cheese, manchego cheese, and pepper to taste.
Preheat the oven to 180 degrees Celsius.
Prepare 2 baking sheets by greasing them with a little of the melted butter.
Take 1 sheet of phyllo (keep the rest of the phyllo dough under a damp cloth so it doesn't dry out) and cut it into strips approximately 10 cm wide.
With a pastry brush, brush the strip with butter, fold in half, and brush again with butter. Place a tablespoon of the cheese filling at the end of the strip.
Fold the strip in half to make a triangle (like the picture) and place it on the baking sheet. Repeat with all the strips.
Bake for 20 minutes or until lightly golden, remove from the oven, and serve.
