Chicken Strips with Amaranth and Habanero Dip

  • 2 chicken breasts, skinless and boneless
  • 2 eggs
  • 1/4 cups milk

  • 1 cup amaranth

  • 1 cup McCormick® Mayonnaise Dressing with Habanero
  • 1/2 cups sour cream
  • 1 teaspoon onion powder
  • 1 tablespoon lime juice

  • Cut the chicken breast into strips.
  • In a bowl, beat the egg with the milk, salt, and pepper.
  • Coat the chicken strips with flour, then dip in egg, and finally cover with amaranth. Refrigerate for 10 minutes.
  • Place the breaded strips on a baking sheet, spray with cooking oil, and bake for 20 minutes at 180 °C.
  • For the habanero dip, mix the McCormick® Mayonnaise Dressing with habanero, cream, onion powder, lime juice, salt, and pepper until you achieve a smooth consistency.
  • Serve the chicken strips and accompany with the habanero dip and vegetable chips.
