Combine the coleslaw, chicken, 1/4 cup of the dressing, and sriracha sauce. Add 1 tbsp. of the coleslaw mixture lengthwise to one side of each wonton wrapper; moisten the opposite side of the wrapper with a little water. Roll the wrappers loosely but press the edges to seal them.
Place them, seam side down, on a baking sheet that you have sprayed with cooking spray. Spray the rolls with a little more oil.
Bake for 10 to 12 minutes or until golden brown. Meanwhile, mix the mayonnaise, blue cheese, celery, and the remaining dressing.
Serve with the mayonnaise mixture.
