Mini Buffalo Chicken Rolls

  • 1 1/2 cups coleslaw
  • 1 cup chicken, cooked and shredded
  • 1/2 cups blue cheese dressing
  • 2 teaspoons Sriracha sauce
  • 24 wonton wrappers
  • 1/2 cups mayonnaise
  • 1/2 cups blue cheese, shredded
  • 1/4 cups celery, finely chopped

  • Preheat the oven to 180°C.
  • Combine the coleslaw, chicken, 1/4 cup of the dressing, and sriracha sauce. Add 1 tbsp. of the coleslaw mixture lengthwise to one side of each wonton wrapper; moisten the opposite side of the wrapper with a little water. Roll the wrappers loosely but press the edges to seal them.
  • Place them, seam side down, on a baking sheet that you have sprayed with cooking spray. Spray the rolls with a little more oil.
  • Bake for 10 to 12 minutes or until golden brown. Meanwhile, mix the mayonnaise, blue cheese, celery, and the remaining dressing.
  • Serve with the mayonnaise mixture.
