Choriqueso

The choriqueso is the Mexican version of fondue, a dish made with a mixture of cheeses.   • 2 tablespoons oil , for the sauce
  • 2 tomatoes, in half, for the sauce
  • 2 tomatillos, in half, for the sauce
  • 1 garlic clove , for the sauce
  • 10 árbol chiles, for the sauce
  • 4 tablespoons lemon juice , for the sauce
  • salt , for the sauce
  • 1/2 cups water, for the sauce
  • 1 1/2 cups chorizo
  • 1 1/2 cups Manchego cheese, grated
  • 1 cup Oaxaca cheese
  • 1/2 cups asadero cheese , grated
  • parsley , finely chopped
  • flour tortillas

  • Heat the oil in a skillet and add the tomatoes, garlic, and árbol chiles. Cook for 5 minutes or until all ingredients are golden brown.
  • Blend the roasted ingredients with lime juice, salt, and water until you obtain a smooth sauce. Set aside.
  • Fry the chorizo for 5 minutes or until well browned. Remove the chorizo from the pan and set aside.
  • Add the cheeses to the same pan, mix, and bake for 15 minutes or until the cheese mixture has melted. Stir to prevent sticking.
  • Once you take the cheese out of the oven, add the chorizo on top and garnish with chopped parsley. Serve with flour tortillas and the sauce.
