1 envelope unflavored gelatin powder
1/2 cups water
1 1/2 cups fresh cilantro, only the leaves
1 teaspoon lime zest
1 package Great Value® cream cheese
1/4 packages Extra Special Goat Cheese®
3/4 cups whipping cream
1 teaspoon salt
1/2 teaspoons white pepper
1 tablespoon fresh cilantro, for decoration
1 package saltine crackers, to accompany

Hydrate the gelatin with water and let it sit for 5 minutes. Melt in the microwave for 10 seconds, mix, and set aside.
Blend the cilantro with the zest, cream cheese, goat cheese, heavy cream, salt, and pepper.
While blending, add the gelatin in a thin stream. Blend until you have a homogeneous mixture.
Pour the mixture into a greased or silicone mold and refrigerate for about 2 hours or until set.
Unmold, garnish with cilantro, and serve with crackers. Buy HERE
