Cilantro Mousse with Cheese Chicharrón

  • 1 cup Parmesan cheese, grated
  • 1 cup whipping cream
  • 1/4 cups mayonnaise
  • 2 cups fresh cilantro, disinfected
  • 2 serrano chiles, seedless
  • 1 cup mascarpone cheese
  • 1/2 cups goat cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cups whipping cream
  • 1 envelope unflavored gelatin powder, rehydrated and melted in the microwave for 20 seconds
  • 1/4 cups cherry tomato, for decoration

  • Preheat the oven to 200° C.
  • On a baking sheet lined with non-stick paper, add parmesan cheese in a circular shape, bake for 10 minutes, remove from the oven, lift the parmesan crust and place it over a mold to shape it like a basket. Set the baskets aside.
  • Blend the heavy cream, mayonnaise, cilantro, serrano chili, mascarpone cheese, goat cheese, salt, and pepper. Set aside.
  • In a bowl, whip the heavy cream until peaks form. Gradually add the blender mixture and incorporate the previously rehydrated and melted gelatin in a steady stream.
  • Serve in small molds and refrigerate for 1 hour or until set.
  • Unmold and serve the mousse in the baskets, decorate with cherry and cilantro. Enjoy.
