Appetizing snack of creamy cilantro mousse with mascarpone and goat cheeses. This smooth mousse with a hint of spice will be the ideal snack for any gathering, accompanied by cheese chicharrón. Try it and you won't regret it.
1 envelope unflavored gelatin powder, rehydrated and melted in the microwave for 20 seconds
1/4 cups cherry tomato, for decoration

Preheat the oven to 200° C.
On a baking sheet lined with non-stick paper, add parmesan cheese in a circular shape, bake for 10 minutes, remove from the oven, lift the parmesan crust and place it over a mold to shape it like a basket. Set the baskets aside.
Blend the heavy cream, mayonnaise, cilantro, serrano chili, mascarpone cheese, goat cheese, salt, and pepper. Set aside.
In a bowl, whip the heavy cream until peaks form. Gradually add the blender mixture and incorporate the previously rehydrated and melted gelatin in a steady stream.
Serve in small molds and refrigerate for 1 hour or until set.
Unmold and serve the mousse in the baskets, decorate with cherry and cilantro. Enjoy.
