Creamy Tuna Stuffed Eggs

Delicious recipe for hard-boiled eggs stuffed with tuna accompanied by a tangy lime and chipotle cream, olives, bell pepper, and cilantro. You can eat them at any time of the day as it is a super easy recipe.

  • 10 White Eggs Great Value®, cooked and peeled
  • 1 cup canned tuna in water
  • 2 tablespoons Great Value® chipotle pepper, ground
  • 1/2 cups sour cream , low in fat
  • 1/4 cups lemon juice
  • 3 tablespoons olives, sliced
  • 3 tablespoons jicama
  • 3 tablespoons Jalapeño chile, finely chopped
  • 3 tablespoons red onion, finely chopped
  • 3 tablespoons yellow bell pepper, finely chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 pinch Great Value® salt
  • 1 pinch pepper
  • 1/4 cups Extra Special® mango and dill dressing

  • Cut the eggs in half and remove the yolk to create a cavity for filling. Finely chop the yolks and set aside.
  • In a bowl, mix the tuna with the chipotles, sour cream, lime juice, olives, jicama, jalapeño pepper, red onion, yellow bell pepper, cilantro, yolks, and season. Add the bowl mixture to the center of the egg and fill it.
