Crispy Meat Rolls with Chipotle Cheese

  • In a bowl, mix the meat, cheese, and chipotle pepper. Set aside.
  • On a griddle, heat the tortillas, fill with the meat mixture, roll up, and secure with a toothpick.
  • On a cutting board, trim the edges of the rolls and cut them in half with a knife. Fry in oil and drain on absorbent paper to remove excess fat.
  • Serve the rolls on a plate over a bed of lettuce. Accompany with lemon soy sauce.
