  • 1 cup ricotta cheese
  • 1 egg, glaze for brushing
  • 1 cup vegetable oil, for frying
  • 1 cucumber, Cut into thin slices and circles with a piping tip
  • 1/4 cups cranberries, finely chopped
  • 3 tablespoons chives, finely chopped
  • 1 cup strawberries, cut into quarters for the jam
  • 1 cup sugar, for the jam
  • 3 tablespoons chipotle chile, for the jam

  • Place the ricotta cheese in a bowl, season with salt and pepper, and fill a piping bag with a star tip. Set aside.
  • Using a star-shaped cutter, cut out the pastry discs; with another smaller cutter of the same shape, cut the center to create a filling space. Seal with egg and fry, draining on a Petalo® paper towel and set aside.
  • Fill the star-shaped circles with cucumber circles, add the ricotta cheese, and garnish with blueberries and chives.
  • For the jam, in a saucepan over medium heat, place the strawberries and sugar, stirring continuously until it thickens and forms a jam. Add the chipotle and let cool.
