In a pot, place enough water to cover the potatoes and boil until a fork goes in easily, approximately 25 min.
In a bowl, mix parsley, onion, and tuna.
Let the potatoes cool for a few minutes, peel them, mash, add salt and pepper.
Add the potato to the tuna and form patties 1cm thick and about 7cm in diameter or the size you prefer, dip them in beaten egg and then in breadcrumbs, finally fry until golden brown, and place them on a plate lined with napkins.
