Cheese Croquettes with Buffalo Dressing

Enjoy these crispy and delicious cheese croquettes, filled with more cheese and accompanied by a very creamy Buffalo Sauce dressing. This snack will become a favorite among your family and friends!

  • 6 potatoes

  • 2 cups Manchego cheese, grated
  • 1 tablespoon chives, finely chopped
  • 2 egg yolks
  • 1 teaspoon garlic powder

  • 1/2 cups Búfalo® pitted olives
  • Monterey Jack cheese, diced
  • 3 eggs, beaten, for breading
  • breadcrumbs, for breading
  • vegetable oil, for frying
  • 1/2 cups Classic Buffalo Sauce 150 g, for the buffalo dressing
  • 2 tablespoons mayonnaise, for the buffalo dressing
  • 1 teaspoon garlic powder, for the buffalo dressing
  • 1 cup cream cheese, for the buffalo dressing
  • pepper, for the buffalo dressing

  • Peel the potatoes, cut into quarters, and set aside.
  • Cook the potatoes in salted water for 20 minutes or until softened. Drain and set aside.
  • Mash the potatoes with a masher until you obtain a smooth consistency, then add the manchego cheese, chives, yolks, garlic powder, and mix until integrated. Season with salt and pepper.
  • Drain the Buffalo® pitted olives and chop into small pieces, then add to the potato mixture and mix very well until you obtain a compact mixture.
  • With the help of your hands, form croquettes, add a cube of cheese in the middle, and wrap with the potato. Then, dip in the beaten egg and bread in breadcrumbs. Freeze the cheese croquettes for 15 minutes before frying.
  • Heat the oil to medium temperature in a deep skillet, fry the croquettes for 8 minutes or until golden brown. Place on absorbent paper to remove excess oil. Set aside.
  • Mix the Buffalo® hot sauce, mayonnaise, garlic powder, and cream cheese in a bowl, then season with pepper.
  • Serve the cheese croquettes with Buffalo Sauce dressing and enjoy!
