Potato and Tuna Croquettes

This is a very easy and nutritious recipe, ideal for Lent, a picnic day, or for lunch.

  • 2 potatoes, large
  • 2 cans tuna
  • 2 eggs
  • vegetable oil
  • salt
  • pepper

  • In a pot, bring water with salt to a boil.
  • Peel the potatoes and cut them into small pieces for faster cooking.
  • Once the water is boiling, add the potato pieces and let them boil until fully cooked.
  • Once the potatoes are well cooked, remove them from the water and cool them in cold water, then place them in a bowl and mash until they form a puree. Set aside.
  • Open and drain the cans of tuna and add them to the bowl with the puree, mixing well and seasoning to taste with salt and pepper.
  • In another bowl, crack and beat the eggs, then add them to the bowl with the potatoes and tuna, mixing very well.
  • Shape the previous mixture into croquettes or patties.
  • In a skillet with hot oil or Pam on low heat, place the croquettes and wait until they brown on the bottom before flipping them to brown on the other side. Remove from the skillet and they are ready.
