Cucumber and Chervil Sandwiches

Cucumber sandwiches are typical in England for tea time. They also make a delicious snack.

  • 1 cucumber, thinly sliced and finely sliced
  • 1 teaspoon salt
  • 6 tablespoons butter
  • 10 slices white bread
  • 2 tablespoons parsley
  • pepper
  • chervil

  • Place cucumbers in a colander. Sprinkle with salt and let sit for 1 hour.
  • Dry cucumbers with a paper towel and spread butter on all slices of bread.
  • Place cucumbers on top of the slices of bread. Sprinkle with pepper and chervil.
  • Trim the edges of the bread and cut the sandwich in half, and then again. This way they will be snack-sized.
  • Tip: You can prepare the sandwiches up to 8 hours in advance, but do not trim the edges. Cover them and place them in the refrigerator. You can trim the edges up to 3 hours before serving.
