2 cups butter
1 cup flour
1 tablespoon nutmeg
1 cup whipping cream
1 teaspoon black pepper
1 1/2 cups serrano ham, finely chopped
2 cups panko, or breadcrumbs
3 eggs
1 cup vegetable oil
Preparation

In a hot pan, add butter and melt over low heat.
Add the flour and mix with the butter until it turns golden. Add nutmeg for flavor and aroma.
Incorporate the heavy cream and ground black pepper.
Finely chop the serrano ham and add it to the pan along with all the ingredients. Let it reduce until the mixture is thick. Cool.
Make small balls and dip them in the egg and then in the panko or breadcrumbs.
Dip again in the egg and then in the panko once more.
Fry the croquettes until they are golden brown and let them cool.
