  • 500 grams pork rinds, in thick strips
  • 1/4 cups mayonnaise with lemon juice McCormick®
  • salt
  • 1/2 cups butter, in medium cubes
  • 1 cup onion, finely chopped
  • 3 cloves garlic
  • 1/2 cups árbol chile
  • 4 cups ear corn, shucked
  • 6 cups pozole broth
  • 1 sprig epazote
  • salt
  • lime
  • queso fresco, crumbled
  • fire potatoes, mashed

  • Brush the pork cracklings with McCormick® mayonnaise with lime juice, sprinkle with salt, and place them in the air fryer tray. Cook at 180 °C for 60 minutes and set aside.
  • Melt the butter in a pot over medium heat and add the onion, garlic, and tree chiles. Sauté for 5 minutes, incorporate the corn, and cook for 5 more minutes.
  • Add the pozole broth, epazote, and salt to the pot and cook over medium heat for 30 minutes.
  • Serve the corn in a cup and add the broth, lime juice, fresh cheese, mashed potatoes, and garnish with McCormick® mayonnaise with lime juice.
