Take one cucumber, peel it, and cut it lengthwise but only the top. Carefully scoop out the pulp and set it aside on a plate.
Once we have hollowed out our cucumbers into canoe shapes, proceed to chop the onion, tomato, cilantro, and mix it with the cucumber pulp and shrimp.
Once everything is well mixed, add lemon juice, salt, and pepper to taste. Proceed to fill each cucumber one by one. Decorate it with some shrimp around.
