Cucumber with Anchovy

A very sophisticated snack in flavor but simple to prepare is Cucumber with Anchovy. It will take you less than 20 minutes to prepare.

  • 1 cucumber, cut into thick slices (you can leave the skin on if you want)
  • 1 can canned anchovy
  • 12 cherry tomatoes
  • olive oil
  • oregano

  • Cut the anchovy fillets and cherry tomatoes in half.
  • Place the cucumber slices on a platter, on top arrange half an anchovy fillet and half a cherry tomato. Stick a toothpick to hold it in place.
  • Drizzle a little olive oil and sprinkle some oregano.
